Orange Creamsicle Overnight Oats (V)
The overnight oat obsession continues…
I’ve always preferred savory breakfasts over sweet ones. In fact, I eat eggs almost every day. But when my legs regularly stick to chairs and I start sweating off my foundation, a hot breakfast just doesn't seem as appetizing.
I heard about overnight oats years ago but never tried it because it seemed odd to eat oatmeal cold. It wasn’t until my brother was scoping out vegan breakfast ideas that I pulled the thought out from the deep reaches of my mind.
“Have you tried overnight oats?”
Turns out Sam had not tried them, and neither had I. But it was love at first bite for us both, and not just because they’re hearty and delicious.
They can be prepped ahead of time and stored for days or even weeks. Just add the wet ingredients the night before you’re ready to eat them--this couldn’t be simpler.
Overnight oats are SO versatile. They can be fruity (like today’s recipe), spiced (like my coconut chai oats), rich with some peanut butter or chocolate, …really any flavor combo you can dream could be made into an overnight oat jar.
Overnight oats are inexpensive. The dry ingredients like oats, chia seeds, dried fruit, nuts, seeds, even spices can all be purchased bulk for pennies on the dollar.
There's ZERO cooking, WIN!
No need to catch the icecream man!
While there’s a special space in my heart for warm oatmeal flavors like cinnamon, maple, and nutmeg, I experimented with a summery twist for this recipe and it turned out fantastic. Creamsicle oats! Not too tart, not too much citrus, but a balanced orange flavor complemented by vanilla and topped with almond slivers. It’s perfect.
How to Stack Some Protein in Your Oats
I'll always advocate for a high-protein breakfast, so I wanted to share this new product with you (it's not sponsored, just pretty cool!)
I stirred in Bolthouse Farms Plant Protein Milk into my oats; it's a pea-protein almond milk blend. Although I'm seeing it at several grocery stores, it might not be available everywhere just yet. If you can't find Bolthouse Farms Plant Protein Milk, I recommend shaking or blending 1/2 a scoop of vanilla protein powder into your milk of choice and using that as your liquid.
Happy spooning!
Orange Creamsicle
overnight oats
Overnight oats are an easy meal prep breakfast that's also way versatile. This oat jar is a fun twist on a creamsicle: Made with creamy vanilla and orange.
Servings: 1 Jar
Ingredients
1/2 cup rolled oats
1/4 cup orange juice
1 tsp honey or preferred sweetener (optional)
1 tbsp chia seeds
1/2 cup Bolthouse Farms Vanilla Protein Milk (See note)
A couple drops of vanilla or almond extract
Slivered almonds for topping
Instructions
In a small jar, combine oats and chia seeds. These can be stored airtight for as long as you like.
The night before you’re ready to eat the oats, add the orange juice, honey, milk, and extract. Stir well.
Refrigerate overnight (or up to 48 hours).
Top with almond silvers before eating.
Recipe Notes
Note 1: If you can't find vanilla protein milk, shake or blend 1/2 a scoop of vanilla protein powder into your preferred milk. I love a whey protein brand called I Heart Macros because it mixes very easily.
