Watermelon Berry Popsicles
Whether you have a house full of kiddos or adults, they will all melt over these popsicles. Watermelon and raspberries are still cheap in the grocery store so not only are these easy to whip up, they're affordable too.
I packaged the popsicles individually into snack-size bags and they flew out of the freezer. Justin eats them like candy because they basically are—but with hydrating electrolytes, lycopene, and vitamin C to boot!
WATERMELON BERRY POPS
6 oz rasperries (one tray)
2 cups watermelon
1 squeezed lime
1/4 cup full-fat coconut milk
1 tablespoon honey
Combine all ingredients into a blender and pulse for about 5 seconds. These ingredients are soft and blend pretty quick.
Fill a popsicle mold with blended mixture and freeze at least four hours.
When you're ready to eat, run the mold under lukewarm water for a minute or less and they should slide out easily.
Popsicles can be stored in the mold or in snack-size plastic bags for a grab-and-go treat.
