Chicken Bistro Box
I didn’t even have to alter anything to make this healthy! Greek food is already pretty on-point. First, we’re making an easy tzatziki, which is a yogurt-based sauce packed with fresh herbs and shredded cucumber. Since plain Greek yogurt is already a great source of protein and probiotics, tzatziki gets an A+ in nutrition without a single recipe modification!
Next I’m going to marinate my chicken in olive oil, lemon juice, and plenty of fresh herbs to give it a beautiful freshness that just begs to be dipped in tzatziki sauce.
Finally, I’m going to pair up the Greek chicken and tzatziki with some fresh vegetables and a healthy pita wrap. Really, the only nutritional modification I made with this meal was opting for a high-fiber pita. Joseph’s Lavish Wrap is the MVP of pita because it’s made with oat bran and whole grains, meaning it’s fiber-packed. The bread’s still soft and tasty, so it’s just like eating regular bread—with benefits.

4 ounces of marinated chicken

1/3 cucumber

Easy Tzatziki
Yields 4 bento boxes
How to Make Easy Tzatziki
1/3 medium cucumber, grated with the large holes of a grater
1 cup plain Greek yogurt
1 tbsp olive oil
2 tbsp fresh dill
1 tbsp lemon juice
2 cloves garlic, minced
Healthy pinch of salt
Using a clean rag or cheesecloth, gather up the shredded cucumber and give it a good squeeze above the sink to remove excess moisture.
Transfer cucumber into a mixing bowl and add all other ingredients. Stir well.
For a bento box, spoon tzatziki into 2-ounce condiment cups and store it alongside your chicken and vegetables.
How to Make Greek Chicken Marinade
1 pound chicken breast
1/2 cup olive oil
2 lemons, juiced
4 cloves garlic, minced
1 tbsp dried oregano
1 tbsp fresh rosemary
1 tbsp fresh thyme
1 tsp salt
1/2 tsp pepper
Add all ingredients except chicken in a mixing bowl and stir until well combined.
To the bag, add chicken breast and seal. Make sure marinade coats the chicken, then store it in your fridge for at least 30 minutes or up to 4 hours.
Coat your grill with some cooking spray and set it to medium-high heat. Once hot, grill the chicken on each side for 7-9 minutes or until the internal temperature is 140 degrees.
Remove chicken and let it cool before slicing it into strips and transferring to a meal prep container. Chicken will keep in the fridge up to 4 days or can be frozen for a month.
Assembling your Greek Chicken Bistro Box
1/3 English cucumber per box
1/2 cup cherry tomatoes or sliced bell peppers per box
1/2 Joseph’s Lavish pita bread per box
Add 4 ounces of chicken, tzatziki cup, vegetables, and pita bread to a meal prep container and store up to 4 days. Note: I chose to use Joseph’s Lavish Pita Bread in this recipe because it’s very high in fiber with manageable calories. Highly recommend this brand!
Recipe Note: If you don’t like tzatziki, hummus plays really well in this Greek Chicken meal prep bistro box!
