Maple Glazed Harvest Bowl
Fall is a GOOD FOOD SEASON. Squash, heck yes! Pears, how you doin’? Apples and brussel sprouts, get in my oven! …but not together. Out of a wild hankerin’ for fall flavors comes this: A sheet pan meal idea that’s roasted to perfection.
REMOVE BACON FOR A PLANT-BASED BOWL
I knew I wanted to incorporate maple syrup into this bowl to complement all those roasted flavors (and because maple is fall all the way). Maple and bacon go hand-in-hand so in comes the turkey bacon, naturally. However, I realized while cooking and tasting that this meal is very satisfying without bacon, if you’re living plant-based or just trying to eat less meat.
With or without bacon, I am patting myself on the back. This bowl’s a party in my mouf. The chopped brussel spouts become crunchy and caramelized while roasted sweet potatoes make it hearty.
The final step was roasted chickpeas with a smoky seasoning. You could also try pecans, roasted pumpkin seeds, or even dried cranberries on top.
And then there’s the best part: easiest clean up ever. One sheet pan to roast them all!
Maple Glazed Harvest Bowl
Servings: 1 BOWL
Ingredients
For sweet potatoes:
1 small sweet potato
2 tsp olive or avocado oil
1 tsp cinnamon
sprinkle of salt
For brussel sprouts:
1/2 pound brussel spouts
2 tsp olive or avocado oil
salt and pepper
For smoky chickpeas:
1/2 can chickpeas (rinsed)
1 tsp paprika
1/2 tsp cayenne pepper
sprinkle of salt
Other ingredients:
1/4 cup maple syrup (extra for drizzle)
3 slices turkey bacon
Instructions
** NOTE: The ingredients listed only yield one bowl. Triple or quadruple the ingredients if meal prepping -- which you totally should. **
Preheat oven to 425 degrees.
Skin and chop sweet potato into cubes. Chop brussel spouts into halves.
Rinse chickpeas.
Coat brussel sprouts, sweet potato, and chickpeas with oil then with the seasonings listed. Arrange them on a cookie sheet (lined with foil for easy cleanup). Work in batches if meal prepping.
Brush maple syrup onto both sides of turkey bacon and add it to the pan.
Bake for 12-15 minutes. After this time, the turkey bacon is done—remove it and cut it into pieces.
Flip all ingredients and bake for 10 more minutes.
If meal prepping: allow ingredients to cool before transferring to a meal prep container.
Before eating: Drizzle a tablespoon of maple syrup onto your harvest bowl right before eating. Very important (and delicious!)
