Ingredients

  • 50g vanilla protein powder (~2 scoops) (See note 1)

  • 1/4 cup coconut flour

  • 1/4 cup almond flour

  • 1/2 cup baking stevia (I used Sweetleaf brand)

  • 1/4 tsp baking powder

  • pinch of salt

  • 1/3 cup unsweetened Greek yogurt

  • 1 egg

  • 1/2 tsp vanilla extract

  • Whipped vanilla or cream cheese frosting

Instructions

Swolemate Sugar Cookies - Main
  1. Preheat oven to 350 degrees.

  2. In a large bowl, stir together the dry ingredients. In a separate bowl, whisk together the egg, vanilla extract, and Greek yogurt.

  3. Fold the wet ingredients into the dry ingredients.

  4. The cookie dough should be thick enough to hold it’s shape. Continue folding with your hands or a spatula until ingredients are well-incorporated.

  5. Add a sprinkle of coconut flour to your workstation, then roll out sugar cookie dough.

  6. Cut dough into hearts (or any shape!) then transfer cookies to a greased cookie sheet. Bake for 7-10 minutes. Keep an eye on them, these cook quickly!

  7. Check the bottom of one cookie at 7 minutes, it should be golden brown. Don’t let the top start browning or cookies will overcook. Cookies are done once the bottom is beginning to brown.

  8. Frost with your favorite frosting and sprinkles, if you prefer!
