Here comes zucchini season, the vegetable that yeilds so damn much we don’t know what to do with it all.

Grate it?

Cube it?

Sauté it?

Zoodle it?

Hide it inside bread?

Bring it to the office and force it on our coworkers?

Here’s a refreshing way to use zucchini for people who aren’t obsessed with this vegetable (i.e. myself). BLEND THAT ZUCCHINI. Such is the fate of all sub-par vegetables—beets and kale among them.

Yeah I said it: I don’t like beets or kale …and neither do you.

Some praise for zucchini: I do appreciate how neutral the flavor is. That’s probably why we’re okay throwing zucchini inside bread and hiding any trace of it with lemon zest and/or chocolate chips.

Let’s talk about the other breakfast smoothie ingredients:

The other ingredients in this chocolate zucchini breakfast smoothie will make you feel like a million bucks. Cacao is a great source of iron, fiber, and magnesium. Chia seeds are the most concentrated form of fiber in the world. Hemp hearts taste SO GOOD, light and nutty (and they’re a good source of healthy fat to keep you full).

Freezer Portions
for Busy Mornings

One of the best things about this smoothie is that it’s portioned out into servings you can grab and dump into your blender with ease. All you’ll need to do is pour 9 ounces of milk in and a splash of vanilla extract if you prefer.

I HIGHLY recommend using a high-powered blender for this smoothie (and in general). My friends, it’s worth the investment to get a good blender. I’ve been #TeamBlendec for almost a decade and my Blendtec still runs as strong as the day I got it. Soups, sauces, and smoothies and come out silky smooth and I will 100% purchase another high-speed blender if mine ever dies (which is looking unlikely!)

Freezer Packs

Recipe yields 1 smoothie
(Multiply as necessary)

Ingredients

  • 1 1/2 cups diced zucchini

  • 4 or 5 pitted dates

  • 1 tablespoon chia seeds

  • 1 tablespoon hemp hearts

  • 1 tablespoon cacao powder (or more)

  • 1/2 teaspoon vanilla extract

  • 9 oz unsweetened almond milk

Instructions

  1. To make a smoothie freezer pack: Layer cacao powder, hemp hearts, chia seeds, dates, and chopped zucchini pieces in a freezer-safe container or a plastic bag.

    These smoothie packs can live in your freezer for up to three months, so I like to prep a bunch of them for easy breakfasts and snacks.

  2. When you’re ready to eat: Dump a freezer smoothie pack into your blender. Add 9 ounces of milk, a splash of vanilla extract, and blend until smooth.

    Blending tip: You will want a high-power blender for this recipe.
